Chaurice is a pork sausage that is Creole Cajun in origin and has a hot and spicy flavor. Chaurice sausage is popular in Creole Cajun cooking both as a main dish and as an ingredient in dishes such as gumbo and jambalaya.
Today in South Louisiana, chaurice is seen most often as a pan-fried side dish for white or red beans. Although much more common in Creole cooking, chaurice is used from time to time by the Cajuns as well.
Similar to chorizo, these Creole/Cajun pork sausages have a spicy kick to them. They are full flavored, delicious, and fun to make.
